Peanut Butter Coconut Bliss Balls: Munchies On The Go

Whenever I’m on Instagram I see bliss balls all over. Sometimes they’re called energy balls, sometimes they’re called power balls, sometimes even protein balls. Really it just depends on what you’re putting in them. This time around accidentally turned into a happy experiment which was delicious and obviously fitting considering they are, after all, called bliss balls. I never would have thought these ingredients would actually go well together but they do and I love them! I’m almost tempted to pop them in the oven and see how they turn out as cookies. Either way, perfect for on the go and guilt free. Only nutrients provided and no added sugar or sweetener. Sound like your kind of deal? Well then, I’m here to give you my first official bliss ball recipe!

First off, you’ll need some ingredients:

~ 12 soaked dates (medjool are the best and I soaked mine for days and days- you might want to avoid soaking for this long, try for 5-8 hours instead)
~ 2 tbs peanut butter (I used crunchy)
~ 1/2-3/4 cup nuts (mine were TJ’s Fancy Mixed Nuts)
~ 1 1/3-2/3 cup shredded coconut (use this to dry out your ‘batter’. Mine was the consistency and wetness of refried beans so I needed about this much to soak up the moisture)

In a blender or food processor, I suggest blending the nuts first (mine didn’t blend in my blender but made for great texture in the bliss balls). Once blended, add the remaining ingredients until it looks less like refried beans and more like dough. Roll about a spoonful between your palms to create the ball shape and you’re ready to go about your day! (pop them in the fridge for a bit more firm bliss ball).
